This is a typical roman dish and it is good also for vegetarians
It is a spicy and tasty dish, very
quick and easy, and I’m sure you can cook it even in a last minute friends reunion : give it a try and you’
ll always make a good impression.
Ingredients for 4 people:
3/4 pound of spaghetti
salt
1 to 2 tablespoons freshly ground pepper (depending on how spicy you
want it)
a
bit of the pasta cooking liquid (about 1/4 to 1/2 of a ladel-full)
2
cups of freshly grounded pecorino romano
Extra
virgin Italian oil (2 or 3 tablespoons)
Preparation:
Boil
your spaghetti in a pot with salted water until perfectly al dente (about 8
minutes)
In
a separate pan add some of the cooking water
and your pepper and toss everything
When
the spaghetti is done add some heated extra virgin oil, the cheese and the rest of the pepper and mix and toss
everything in the pan. Add a bit of the cooking liquid if necessary.
Plate
and top with a sprinkle more of pepper and cheese and eat immediately ,when
still heat!
You can
replace the pecorino romano with parmesan cheese, that is a little bit milder
